Fadely's Finger Lickin' Fixin's

ZESTY CABBAGE SALAD
1 head of cabbage, shredded * **
1 small to medium diced onion
2 to 3 cups cooked, diced chicken breast
4 teaspoons sesame seeds
4 oz. slivered almonds
2 tablespoons sugar
2 packages chicken flavored, dry Ramen
1 bottle of zesty Italian dressing
noodles broken into small pieces
Broil chicken breast in several cups of water. Add salt
and Pepper if desired.
Allow the chicken to cool, drain and then dice into small,
bite sized pieces.
Wash the head of cabbage *** and drain. Shred cabbage
by hand grater or
food processor. Add the onions, sesame seeds, almonds
and sugar. Break the
Ramen noodles into small pieces. Add to the cabbage mixture
and stir thoroughly.
Shake and add Italian dressing to your taste. **** Store
in an air tight container
until serving time. Make several hours in advance for
best flavor.
* This can be made a day ahead, refrigerated, and the flavor is enhanced.
** The perfect recipe for a family reunion. It makes a large quantity of salad.
*** It is important to wash all fresh produce thoroughly.
There are many
contaminants that could
be present: bugs, insecticide, dirt, preservative,
and bacteria.
**** Prior to serving time, taste the salad. Usually it
will be necessary to add
additional
dressing as the noodles tend to absorb all the flavorings.
Toss lightly.
Helpful Hint: 3 teaspoons equal 1 tablespoon
Helpful Hint: Dice
the chicken and onion on a cutting board to prevent cuts in the
counter top. Use the knife to rake the ingredients into the storage
container.
