Sausage Soufflé

1    pound bulk sausage - mild, medium or hot (your choice)
6    slices bread, including crust, cubed
2    Cup grated longhorn cheddar cheese
1    teaspoon dry mustard
2 - 1    teaspoon salt
4    eggs, well beaten
2    Cups milk

Brown sausage and drain well. * Add bread cubes, grated cheese, mustard and
salt. Beat the eggs with milk. ** Mix all ingredients thoroughly and pour
into a greased or sprayed 10" x 6" x 2" casserole dish. (A 9" square glass baking
dish works well.) Cover with plastic wrap and foil then set in the refrigerator
overnight. Prior to baking, remove the plastic wrap, but replace the foil. Bake
covered in a preheated 350º degree oven for 45 minutes; uncover, lower
temperature to 325º degrees and bake an additional 15 minutes.

Helpful Hint:    * Remember to never drain any meats down your kitchen
sink. Once the grease has cooled off, it will set up somewhere in the pipes.

Helpful Hint: ** Use 1% or 2% milk for reduced fat content.

Helpful Hint:    Serve with orange juice or fresh fruit for a nutritious
breakfast meal.
