Fadely's Finger Lickin' Fixin's

HOT FUDGE PUDDING
 

Combine these ingredients in a medium mixing bowl* and set aside:
1/3 Cup sugar
2-1/2 Tablespoons cocoa**
1-1/3 Cups milk (1% or 2% milk reduces fat content)
Grease the bottom only of a  9" x  9" glass cake pan. In a large mixing
bowl, combine and sift together the following ingredients:
2/3 Cup flour
1/2 Cup sugar
2-1/2 Tablespoons cocoa**
1-1/4 teaspoons baking powder***
1/4 teaspoon salt
After sifting the above ingredients, mix in these ingredients:
2/3 Cup chopped pecans
6 Tablespoons milk
2 tablespoons oil
3/4 teaspoon vanilla
Quickly pour into the greased pan. Gently pour milk, sugar,
cocoa mixture from the first step over the "cake" mixture. Bake at
350º degrees for 30 minutes**** (The finished product will be
bubbly and pudding consistency in places.) Use a toothpick to test
for doneness in the center of the product.
 

* A whisk or rotary beater may be necessary to thoroughly combine the cocoa,
sugar, and milk. The cocoa will rise to the top -- mix thoroughly prior to pouring
over the "cake" mixture.
** 1/2 Tablespoon is equal to 1-1/2 teaspoons.
*** It is extremely important to stir baking powder before using it. The
leavening agent settles to the bottom of the can; if it is not stirred properly, the
product will not rise correctly.
**** Do not open the oven door during baking. It allows hot air to escape and
the leavening action will not occur properly.
