Fadely's Finger Lickin' Fixin's

Cheese Balls

Place the following ingredients (EXCEPT THE PECANS) in a large mixing bowl.
Using an electric mixer, beat until all ingredients are completely combined.*

2-5 oz.. jars Old English cheese
1 lb. processed cheese
2 cloves garlic, minced or chopped very fine**
2 tsp. mustard
4 tbs.. (1/4 cup) Miracle Whip or other salad dressing
2 tbs.. heaping horseradish

3-4 cups finely chopped pecans***

Mixture will be stiff.  Turn onto waxed paper and form into a large ball or several 8" logs rolls.
Roll in finely chopped pecans.  Roll tightly in plastic wrap and store in an airtight bag.  Refrigerate of freeze.
Serve with assorted crackers of fresh veggies.

* Do NOT turn mixer on high until the ingredients have begun to combine and form a ball.
** A garlic press is an inexpensive piece of equipment that crushes the garlic without odorizing the hands.
*** Helpful Hint:  When preparing nuts for chopping, be sure to look through them and remove all hulls and shells.
Biting down on a piece of shell can be very painful.  For fewer calories, the cheese calls can be rolled in parsley flakes
or paprika.  Or make several small balls of each kind.
These can be frozen for several months without damaging the flavor and texture of the cheese balls.
