Onion Meat Loaf (Moist)

2 1/2 - 3 lbs.  Ground Chuck
1          Large Onion chopped
2 to 3   Cloves Garlic finely chopped
2 to 3   Celery stalks cut to 1/8 inch moons
1 cup   Old Fashion Oat Meal  or 1 package from a box of
            Saltine Crackers crumbled
4          Large Eggs
1 cup   Evaporated milk
1 tbls.  Salt (can reduce salt if using crackers)
1 tbls.  Black Pepper
1 tbls.  Coriander
1 tsp.   Savory
 

Mix all ingredients in large mixing bowl, mixture should be slightly
 on the moist side. Mix until well blended. Add evaporated milk as
needed to obtain consistency.
Spread meat mixture into 9"X13"X2" baking pan.
Bake at 350º F for 45 minutes uncovered.
If topping is desired, spread 1 can Cream of Onion soup or
Cream of Mushroom soup over top as an alternative to catsup.
Bake additional 15 minutes.
Total bake time is 1 hour.
