Sandwich Meat Loaf

2 lbs.        Ground Chuck
1 small     Red Onion (chopped)
6   Large  Eggs
1 tbls.      Black Pepper
4 Tbls.     Lawrey’s Season Salt
1 tube      Stay Fresh Saltine Crackers ( crumbled)

Pre-heat oven to 350ºF

In large mixing bowl combine ground chuck, onions, eggs and seasonings until
well mixed. Crumble crackers and fold into mixture untill moist. Mold mixture into
high sided loaf pan, forming a rounded top.
Bake at 350ºF for approximately 45 minutes. Drain as much grease as possible.
Place on cooling rack let cool. Serve hot if serving as main meat dish.

Optional sandwich serving:
After baking is complete, cool on cooling rack then cover and refrigerate about 2 hours.
Remove meat loaf from refrigerator. Slice into desired thickness for sandwiches.
Serve as desired for lunches or snacks. Refrigerate left over slices in resealable
air tight containers. Great for a quick, cool sandwich on hot days.
