Creamy Cole Slaw

1 large head  of Cabbage, fine shredded (or 2 small heads)
2 oz. Pimentos, chopped (Optional)
2 Tablespoons  Celery Seed (optional)
1 cup   Apple Cider Vinegar
1-1/2 cups  Sugar
1/2 Tablespoon Salt
1 to 2  Tablespoons  Prepared Mustard
1 cup  Mayonnaise

Mix well, cover and let stand overnight in refrigerator.
Stir well before serving.
